The Pignoletto Cellar

 Bonfiglio is an historical wine cellar located in Monteveglio/Bologna (Emilia Romagna region) with more than fifty years of typical d.o.c./d.o.c.g. wine production obtained from grapes of his own hilly vineyards owned to the Ranuzzi de’ Bianchi Counts family when, on the mid of last century, thanks to the particular favourable microclimatic conditions of this territory, they decided to convert them into high quality wine production. The Company’s new structure held by Baraldi family intends to proceed along the route strengthened during the past years in which the respect for tradition and genuineness has been always linked up with the experimentation, the low yields and the natural systems to prevent the vine deseases in his own vineyards located between Monteveglio and Oliveto hills.

In the last years important investments have been made in vineyard and cellar to improve the great quality of the Colli Bolognesi grapes and the wine making techniques in order to get always high standard products. All grapes cultivation techniques are performed in full respect and compliance with the environmental prescriptions, from the vineyard grassing to the vine defense treatments through the principles and tools of DIA (advanced integrated defense) in compliance with EU regulations, till the organic and natural manuring systems. Low yields per hectare obtained by reducing production with short prunings and the thinning out practise are basic concepts Bonfiglio has always focused to get very high quality products.
Production
In the last years important investments have been made in vineyard and cellar to improve the great quality of the Colli Bolognesi grapes and the wine making techniques in order to get always high standard products. All grapes cultivation techniques are performed in full respect and compliance with the environmental prescriptions, from the vineyard grassing to the vine defense treatments through the principles and tools of DIA (advanced integrated defense) in compliance with EU regulations, till the organic and natural manuring systems. Another point of strength for Bonfiglio is given by its caveau for conservation of the finished product, a suitable room specifically built underground with the purpose to keep a natural constant temperature around 10°-11°C all year, a right grade of internal humidity obtained by a specific treatment on the walls, and finally the total absence of any source of light.

As great interpreter of ‘Pignoletto’, Bonfiglio is able to obtain very interesting products from this indigenous grape varietal: from the sparkling execution made by the ‘charmat method’ of tank refermentation and the 'méthode traditionnelle' of refermentation in bottle, to the still execution of Pignoletto Classico and Superiore vinified in steel and well structured after four months of batonnage on the lees, until the Passito obtained from grapes of Oliveto hills microzone after long and careful evolution in barriques. In 2014 by the Ministry of Agriculture and Forestry the DOCG (denomination of controlled and guaranteed origin) for Pignoletto wine was assigned to the production area of Colli Bolognesi only, as confirmation of the excellence level of quality achieved in our production area.
