Pignoletto "Il Passito"
'Pignoletto' is an historical indigenous wine grape variety from Colli Bolognesi area, revalued with great appreciation in the last years. The best bunches perfectly ripened, manually selected, coming from Baraldi's vineyards situated in the microzone of Oliveto are dried overtime until the month of February inside the place once used as a barn. They are then squeezed and, after a period of 6 months in Allier barriques, finally refined in bottle. The yield per 1 kg of grapes is 0,300 litres of wine approx.
Gold yellow colour with amber tints, semisweet taste with a pleasant bitterish vein.
