Barbera & Merlot are the grapes utilised to obtain this wine we have given the name of BARBAROT from an ancient farm on the Bolognese hills in the heart of D.O.C. area where red grapes have been always cultivated. Lightly sparkling with the ‘charmat’ method, you can get underbush scents and some spicy notes. Perfect with the italian tagliatelle, salami, sausages and any boiled meat.
The best bunches of Cabernet Sauvignon and Merlot of our vineyards in the Colli Bolognesi area are picked up and wine-made with the traditional maceration and fermentation for 15 days on the dregs at a controlled temperature of 20°-22°C. Ruby red wine with a good ageing capacity for 3-4 years.
Among the microzones of Colli Bolognesi suitable to the production of red grapes, we have chosen that one where the best grapes of Cabernet Sauvignon are picked. ROSSO BOLOGNA RESERVE "BARALDESCO"
All the hand picked grapes come only from our vineyards located in Mozzanello area. The particular care devoted to this wine enables it to “live” longer, improving with time. Kept in Allier barrique, just the time necessary to change its rough tannins into light aromas, this wine has been then refined in bottle. Full and virile, persistent with fresh hay and underbrush scent, it is ideal with roast meat and game, perfect with grilled food and an excellent companion of seasoned cheeses.
